Scamorza is a "pasta filata" (spun paste) cheese, similar to mozzarella but firmer and drier. Our Scamorza Affumicata is naturally smoked, giving its distinct pear shape a lovely golden-brown skin and a deeply aromatic, savory, smoky flavor that permeates the mild, milky interior. It has a pleasant, slightly chewy texture when eaten raw, but its true magic lies in how it melts.
